Banana bread is perfect for breakfast, as a dessert with a scoop of vanilla ice-cream and a quick snack when you have nothing to fill your tummy with. I read the recipe to come ages ago over the internet, and quickly it went into my virtual recipe book. It is slightly adapted but the original link is unfortunately lost among the trillions on Google, which I will put in here, whenever I locate it.
So why not join the party and bake this scrumptious Marbled Chocolate Banana Bread right away?
INGREDIENTS
1/2 cup chocolate chips (melted)
3/4 cup sugar
1/4 cup butter (room temperature)
3 large bananas (slightly ripe, mashed)
2 eggs
1/4 cup yogurt
2 cups all-purpose flour
1 tsp cinnamon
1 tsp baking soda
pinch of salt
METHOD
Pre-heat the oven to 180 C.
In a large mixing bowl, add butter and sugar. Whisk them together until creamy and fluffy.
Put in the eggs, yogurt and mashed bananas to the mixture above.
Fold in the rest of the dry ingredients; flour, baking soda, cinnamon and salt. Combine it all but don't over-mix.
Grease a 9x5" pan and pour the batter in it, saving 1 cup aside.
In this remaining batter, add the melted chocolate.
Pour this chocolate batter in the banana mixture and swirl ever so slightly with a fork.
Put this batter in the preheated oven for 80-90 minutes, until a knife or toothpick comes out clean.
When done, let it rest for 5-8 minutes before serving.
